- Vegetable broth - 400 ml
- Olive oil - 2 tablespoons
- Lime - 1, juiced
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- In a blender, combine the tomatillos, chopped cilantro, garlic, lime juice, salt, and pepper. Blend until smooth to create the salsa verde.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
- Add the rice to the saucepan and toast for 2-3 minutes, stirring frequently until slightly golden.
- Pour in the vegetable broth and the salsa verde, stirring to combine. Bring the mixture to a boil.
- Reduce the heat to low, cover the saucepan, and let it simmer for about 20 minutes or until the rice is tender and has absorbed the liquid.
- Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork before serving.
