  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Vegetable broth - 400 ml
  • Olive oil - 2 tablespoons
  • Lime - 1, juiced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. In a blender, combine the tomatillos, chopped cilantro, garlic, lime juice, salt, and pepper. Blend until smooth to create the salsa verde.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
  3. Add the rice to the saucepan and toast for 2-3 minutes, stirring frequently until slightly golden.
  4. Pour in the vegetable broth and the salsa verde, stirring to combine. Bring the mixture to a boil.
  5. Reduce the heat to low, cover the saucepan, and let it simmer for about 20 minutes or until the rice is tender and has absorbed the liquid.
  6. Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork before serving.
