Ingredients

  • Cauliflower - 1 medium head, grated into rice-sized pieces
  • Poblano peppers - 2 medium, roasted, peeled, and sliced into strips
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Mexican cheese blend (or queso fresco) - 100 grams, shredded
  • Cumin - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Begin by roasting the poblano peppers over an open flame or under a broiler until the skin is charred. Place them in a plastic bag for 10 minutes to steam, then peel and slice into strips.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and sauté for another minute until fragrant.
  4. Stir in the roasted poblano strips, cumin, salt, and black pepper. Cook for about 5 minutes to combine the flavors.
  5. While the poblano mixture is cooking, prepare the cauliflower rice by steaming or microwaving the grated cauliflower for about 5 minutes until tender.
  6. Once the cauliflower is cooked, add it to the skillet with the poblano mixture. Stir well to combine.
  7. Sprinkle the shredded cheese over the mixture and cover the skillet for 2-3 minutes, allowing the cheese to melt.
  8. Remove from heat and garnish with fresh cilantro before serving.
