Ingredients

  • Long-grain white rice - 1 cup
  • Chicken breast, diced - 200 grams
  • Poblano peppers, sliced - 1 large
  • Onion, diced - 1 small
  • Garlic, minced - 2 cloves
  • Vegetable oil - 2 tablespoons
  • Chicken broth - 2 cups
  • Cilantro, chopped - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lime juice - 1 tablespoon
  • Shredded cheese (optional) - 50 grams

Steps

  1. In a large skillet, heat the vegetable oil over medium heat. Add the diced chicken breast and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  2. In the same skillet, add the diced onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.
  3. Add the sliced poblano peppers to the skillet and cook for an additional 5 minutes until softened.
  4. Stir in the rice and toast it for 2-3 minutes until slightly golden.
  5. Return the cooked chicken to the skillet, then pour in the chicken broth. Add salt and black pepper, stir well, and bring to a boil.
  6. Reduce the heat to low, cover, and let it simmer for 15 minutes or until the rice is cooked and liquid is absorbed.
  7. Remove from heat and fluff the rice with a fork. Mix in chopped cilantro and lime juice.
  8. Serve hot, topped with shredded cheese if desired.
