- Long-grain white rice - 1 cup
- Chicken breast, diced - 200 grams
- Poblano peppers, sliced - 1 large
- Onion, diced - 1 small
- Garlic, minced - 2 cloves
- Vegetable oil - 2 tablespoons
- Chicken broth - 2 cups
- Cilantro, chopped - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lime juice - 1 tablespoon
- Shredded cheese (optional) - 50 grams
Steps
- In a large skillet, heat the vegetable oil over medium heat. Add the diced chicken breast and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the diced onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.
- Add the sliced poblano peppers to the skillet and cook for an additional 5 minutes until softened.
- Stir in the rice and toast it for 2-3 minutes until slightly golden.
- Return the cooked chicken to the skillet, then pour in the chicken broth. Add salt and black pepper, stir well, and bring to a boil.
- Reduce the heat to low, cover, and let it simmer for 15 minutes or until the rice is cooked and liquid is absorbed.
- Remove from heat and fluff the rice with a fork. Mix in chopped cilantro and lime juice.
- Serve hot, topped with shredded cheese if desired.
