  • Cheddar cheese (shredded) - 100 grams
  • Cotija cheese (crumbled) - 50 grams
  • Olive oil - 1 tablespoon
  • Garlic (minced) - 2 cloves
  • Onion (finely chopped) - 1 small
  • Bell pepper (diced) - 1 small
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro (chopped) - for garnish

Steps

  1. Heat the olive oil in a medium saucepan over medium heat. Add the chopped onion, bell pepper, and minced garlic, sautéing until softened, about 5 minutes.
  2. Stir in the cumin and paprika, cooking for an additional 1 minute to release the spices' flavors.
  3. Add the rice to the saucepan, stirring well to coat it with the oil and spices. Toast the rice for 2-3 minutes until slightly golden.
  4. Pour in the vegetable broth and bring the mixture to a boil. Lower the heat, cover, and let it simmer for 15 minutes or until the rice is cooked and the liquid is absorbed.
  5. Once the rice is cooked, gently fold in the black beans, cheddar cheese, and half of the Cotija cheese. Stir until the cheese is melted and everything is well combined.
  6. Season with salt and black pepper to taste. Remove from heat and let it sit covered for 5 minutes.
  7. Serve the Arroz con Queso hot, garnished with the remaining Cotija cheese and fresh cilantro.
