- Pork shoulder - 300 grams, cut into small cubes
- Cauliflower - 400 grams, riced
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, diced
- Red bell pepper - 1, diced
- Green bell pepper - 1, diced
- Tomato - 1 large, diced
- Chicken broth - 250 ml
- Cumin - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Oregano - 1 teaspoon
- Salt - 1 teaspoon (to taste)
- Black pepper - 1/2 teaspoon (to taste)
- Lime - 1, juiced
- Fresh cilantro - for garnish
Steps
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion is translucent.
- Add the cubed pork shoulder to the skillet and cook until browned on all sides, about 8-10 minutes.
- Stir in the diced red and green bell peppers and cook for another 5 minutes, until they start to soften.
- Add the diced tomato, chicken broth, cumin, smoked paprika, oregano, salt, and black pepper. Bring to a simmer and cover the skillet, cooking for about 15 minutes until the pork is tender.
- While the pork is cooking, prepare the cauliflower rice by ricing the cauliflower florets (or using pre-riced cauliflower).
- After 15 minutes, stir in the cauliflower rice, cover, and cook for another 10 minutes until the cauliflower is tender.
- Remove from heat, stir in the lime juice, and adjust seasoning if necessary.
- Serve hot, garnished with fresh cilantro.
