Ingredients

  • Pork shoulder - 300 grams, cut into small cubes
  • Cauliflower - 400 grams, riced
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Red bell pepper - 1, diced
  • Green bell pepper - 1, diced
  • Tomato - 1 large, diced
  • Chicken broth - 250 ml
  • Cumin - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Oregano - 1 teaspoon
  • Salt - 1 teaspoon (to taste)
  • Black pepper - 1/2 teaspoon (to taste)
  • Lime - 1, juiced
  • Fresh cilantro - for garnish

Steps

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion is translucent.
  2. Add the cubed pork shoulder to the skillet and cook until browned on all sides, about 8-10 minutes.
  3. Stir in the diced red and green bell peppers and cook for another 5 minutes, until they start to soften.
  4. Add the diced tomato, chicken broth, cumin, smoked paprika, oregano, salt, and black pepper. Bring to a simmer and cover the skillet, cooking for about 15 minutes until the pork is tender.
  5. While the pork is cooking, prepare the cauliflower rice by ricing the cauliflower florets (or using pre-riced cauliflower).
  6. After 15 minutes, stir in the cauliflower rice, cover, and cook for another 10 minutes until the cauliflower is tender.
  7. Remove from heat, stir in the lime juice, and adjust seasoning if necessary.
  8. Serve hot, garnished with fresh cilantro.
