- Garlic - 2 cloves, minced
- Bell pepper - 1 medium, diced
- Zucchini - 1 medium, diced
- Carrot - 1 medium, diced
- Green peas - 1/2 cup (fresh or frozen)
- Chicken broth - 2 cups
- Tomato sauce - 1/2 cup
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh cilantro - for garnish
Steps
- In a large skillet, heat the olive oil over medium heat. Add the diced chicken and cook until browned, about 5-7 minutes. Remove the chicken and set aside.
- In the same skillet, add the diced onion and garlic. Sauté until the onion is translucent, about 3-4 minutes.
- Add the bell pepper, zucchini, carrot, and green peas to the skillet. Cook for another 5 minutes until the vegetables begin to soften.
- Stir in the brown rice, cumin, paprika, salt, and black pepper. Mix well to coat the rice with the spices and vegetables.
- Pour in the chicken broth and tomato sauce. Bring to a simmer, then reduce the heat to low. Cover and cook for 25-30 minutes, or until the rice is tender and has absorbed the liquid.
- Once the rice is cooked, add the browned chicken back to the skillet. Stir gently to combine and heat through for about 2-3 minutes.
- Remove from heat and let it sit covered for another 5 minutes. Fluff the rice with a fork, garnish with fresh cilantro, and serve.
