  • Brown rice - 1 cup
  • Chicken breast - 200 grams, diced
  • Olive oil - 1 tablespoon
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Carrot - 1 medium, diced
  • Green peas - 1/2 cup (fresh or frozen)
  • Chicken broth - 2 cups
  • Tomato sauce - 1/2 cup
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh cilantro - for garnish

Steps

  1. In a large skillet, heat the olive oil over medium heat. Add the diced chicken and cook until browned, about 5-7 minutes. Remove the chicken and set aside.
  2. In the same skillet, add the diced onion and garlic. Sauté until the onion is translucent, about 3-4 minutes.
  3. Add the bell pepper, zucchini, carrot, and green peas to the skillet. Cook for another 5 minutes until the vegetables begin to soften.
  4. Stir in the brown rice, cumin, paprika, salt, and black pepper. Mix well to coat the rice with the spices and vegetables.
  5. Pour in the chicken broth and tomato sauce. Bring to a simmer, then reduce the heat to low. Cover and cook for 25-30 minutes, or until the rice is tender and has absorbed the liquid.
  6. Once the rice is cooked, add the browned chicken back to the skillet. Stir gently to combine and heat through for about 2-3 minutes.
  7. Remove from heat and let it sit covered for another 5 minutes. Fluff the rice with a fork, garnish with fresh cilantro, and serve.
