- Brown rice - 1 cup
- Vegetable broth - 2 cups
- Olive oil - 2 tablespoons
- Red bell pepper - 1, diced
- Green bell pepper - 1, diced
- Carrot - 1, diced
- Onion - 1/2, diced
- Garlic - 2 cloves, minced
- Frozen peas - 1/2 cup
- Corn - 1/2 cup
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
Steps
- Rinse the brown rice under cold water until the water runs clear, then set aside.
- In a medium pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
- Add minced garlic, diced red and green bell peppers, and diced carrot to the pot. Sauté for another 5 minutes until the vegetables start to soften.
- Stir in the cumin, paprika, turmeric, salt, and black pepper, and cook for about 1 minute until fragrant.
- Add the rinsed brown rice to the pot and stir to coat the rice with the vegetable mixture.
- Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 35 minutes, or until the rice is cooked and the liquid is absorbed.
- After 35 minutes, add the frozen peas and corn to the pot, fluff the rice with a fork, and cover again. Let it sit for an additional 5 minutes.
- Remove from heat, stir in fresh cilantro and lime juice, and serve warm.
