Ingredients

  • Brown rice - 1 cup
  • Vegetable broth - 2 cups
  • Olive oil - 2 tablespoons
  • Red bell pepper - 1, diced
  • Green bell pepper - 1, diced
  • Carrot - 1, diced
  • Onion - 1/2, diced
  • Garlic - 2 cloves, minced
  • Frozen peas - 1/2 cup
  • Corn - 1/2 cup
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced

Steps

  1. Rinse the brown rice under cold water until the water runs clear, then set aside.
  2. In a medium pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  3. Add minced garlic, diced red and green bell peppers, and diced carrot to the pot. Sauté for another 5 minutes until the vegetables start to soften.
  4. Stir in the cumin, paprika, turmeric, salt, and black pepper, and cook for about 1 minute until fragrant.
  5. Add the rinsed brown rice to the pot and stir to coat the rice with the vegetable mixture.
  6. Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 35 minutes, or until the rice is cooked and the liquid is absorbed.
  7. After 35 minutes, add the frozen peas and corn to the pot, fluff the rice with a fork, and cover again. Let it sit for an additional 5 minutes.
  8. Remove from heat, stir in fresh cilantro and lime juice, and serve warm.
