- Cauliflower rice - 300 grams
- Chicken thighs, boneless and skinless - 300 grams
- Olive oil - 2 tablespoons
- Red bell pepper, diced - 1/2
- Green bell pepper, diced - 1/2
- Onion, diced - 1 small
- Garlic, minced - 2 cloves
- Chicken broth - 250 ml
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro, chopped - 2 tablespoons
- Lime juice - 1 tablespoon
Steps
- Heat the olive oil in a large skillet over medium heat.
- Add the diced onion and sauté for 2-3 minutes until translucent.
- Add the minced garlic, diced red and green bell peppers, and cook for another 3-4 minutes until the peppers soften.
- Season the chicken thighs with salt, pepper, cumin, paprika, and oregano. Add them to the skillet and cook for about 5-6 minutes until browned on all sides.
- Pour in the chicken broth, bring to a simmer, and cover the skillet. Cook for 10-12 minutes until the chicken is cooked through.
- Remove the chicken from the skillet, shred it using two forks, and set aside.
- In the same skillet, add the cauliflower rice and mix thoroughly. Cook for an additional 5-7 minutes, stirring occasionally, until the cauliflower rice is tender.
- Return the shredded chicken to the skillet, add lime juice and chopped cilantro, and mix well. Cook for another 2 minutes to heat through.
