Ingredients

  • Cauliflower rice - 300 grams
  • Chicken thighs, boneless and skinless - 300 grams
  • Olive oil - 2 tablespoons
  • Red bell pepper, diced - 1/2
  • Green bell pepper, diced - 1/2
  • Onion, diced - 1 small
  • Garlic, minced - 2 cloves
  • Chicken broth - 250 ml
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro, chopped - 2 tablespoons
  • Lime juice - 1 tablespoon

Steps

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced onion and sauté for 2-3 minutes until translucent.
  3. Add the minced garlic, diced red and green bell peppers, and cook for another 3-4 minutes until the peppers soften.
  4. Season the chicken thighs with salt, pepper, cumin, paprika, and oregano. Add them to the skillet and cook for about 5-6 minutes until browned on all sides.
  5. Pour in the chicken broth, bring to a simmer, and cover the skillet. Cook for 10-12 minutes until the chicken is cooked through.
  6. Remove the chicken from the skillet, shred it using two forks, and set aside.
  7. In the same skillet, add the cauliflower rice and mix thoroughly. Cook for an additional 5-7 minutes, stirring occasionally, until the cauliflower rice is tender.
  8. Return the shredded chicken to the skillet, add lime juice and chopped cilantro, and mix well. Cook for another 2 minutes to heat through.
