- Chicken thighs - 300 grams
- Olive oil - 2 tablespoons
- Cauliflower - 400 grams (riced)
- Bell pepper (red) - 1 medium, diced
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Chicken broth - 200 ml
- Cilantro (fresh) - 2 tablespoons, chopped
- Lime - 1, juiced
Steps
- Preheat oven to 200°C (400°F).
- In a bowl, mix olive oil, cumin, paprika, oregano, salt, and black pepper. Add chicken thighs and coat them well with the marinade. Let it marinate for at least 15 minutes.
- Place the marinated chicken thighs on a baking sheet and roast in the preheated oven for 25-30 minutes, or until the chicken is cooked through and golden brown.
- While the chicken is roasting, heat a skillet over medium heat and add a tablespoon of olive oil.
- Add diced onion and bell pepper to the skillet, sauté for about 5 minutes until softened.
- Stir in minced garlic and cook for an additional minute.
- Add the riced cauliflower and chicken broth to the skillet, stirring well. Cook for about 10-12 minutes until the cauliflower is tender and the liquid has mostly evaporated.
- Once the chicken is done, remove it from the oven and let it rest for a few minutes before slicing.
- To serve, plate the cauliflower rice mixture, top with sliced chicken, and garnish with fresh cilantro and a squeeze of lime juice.
