Ingredients

  • Chicken thighs - 300 grams
  • Olive oil - 2 tablespoons
  • Cauliflower - 400 grams (riced)
  • Bell pepper (red) - 1 medium, diced
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Chicken broth - 200 ml
  • Cilantro (fresh) - 2 tablespoons, chopped
  • Lime - 1, juiced

Steps

  1. Preheat oven to 200°C (400°F).
  2. In a bowl, mix olive oil, cumin, paprika, oregano, salt, and black pepper. Add chicken thighs and coat them well with the marinade. Let it marinate for at least 15 minutes.
  3. Place the marinated chicken thighs on a baking sheet and roast in the preheated oven for 25-30 minutes, or until the chicken is cooked through and golden brown.
  4. While the chicken is roasting, heat a skillet over medium heat and add a tablespoon of olive oil.
  5. Add diced onion and bell pepper to the skillet, sauté for about 5 minutes until softened.
  6. Stir in minced garlic and cook for an additional minute.
  7. Add the riced cauliflower and chicken broth to the skillet, stirring well. Cook for about 10-12 minutes until the cauliflower is tender and the liquid has mostly evaporated.
  8. Once the chicken is done, remove it from the oven and let it rest for a few minutes before slicing.
  9. To serve, plate the cauliflower rice mixture, top with sliced chicken, and garnish with fresh cilantro and a squeeze of lime juice.
