- Chicken thighs - 300 grams
- Long-grain rice - 1 cup (200 grams)
- Chicken broth - 2 cups (480 ml)
- Olive oil - 2 tablespoons (30 ml)
- Garlic - 2 cloves, minced
- Onion - 1 medium, chopped
- Red bell pepper - 1, chopped
- Green peas - 1/2 cup (75 grams)
- Tomato - 1 medium, diced
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh cilantro - for garnish
Steps
- Preheat the oven to 190°C (375°F).
- In a large oven-safe skillet, heat olive oil over medium heat. Add the chicken thighs and brown them on both sides for about 5-7 minutes. Remove and set aside.
- In the same skillet, add the chopped onion and garlic. Sauté until the onion is translucent, about 3-4 minutes.
- Add the red bell pepper, cumin, paprika, oregano, salt, and black pepper. Cook for another 2 minutes until the peppers soften.
- Stir in the rice, coating it well with the mixture, and then add the diced tomato and green peas.
- Pour in the chicken broth and bring to a gentle simmer.
- Place the browned chicken thighs on top of the rice mixture. Cover the skillet with a lid or aluminum foil.
- Transfer the skillet to the preheated oven and bake for 30 minutes.
- After 30 minutes, remove the cover and bake for an additional 10 minutes, or until the rice is tender and the liquid is absorbed.
- Garnish with fresh cilantro before serving.
