- Brown rice - 1 cup (200 grams)
- Chicken broth - 2 cups (480 ml)
- Chipotle peppers in adobo sauce - 2 peppers, chopped
- Garlic - 2 cloves, minced
- Onion - 1 medium, diced
- Bell pepper - 1 medium, diced
- Tomato - 1 medium, diced
- Olive oil - 1 tablespoon (15 ml)
- Cumin - 1 teaspoon (5 grams)
- Oregano - 1 teaspoon (5 grams)
- Salt - 1 teaspoon (5 grams)
- Black pepper - 1/2 teaspoon (2 grams)
- Cilantro - 1/4 cup (15 grams), chopped, for garnish
Steps
- In a medium pot, heat olive oil over medium heat. Add the diced onion and bell pepper, and sauté for about 3-4 minutes until softened.
- Add the minced garlic and cook for an additional 1 minute until fragrant.
- Stir in the chopped chipotle peppers, cumin, oregano, salt, and black pepper, cooking for another minute to combine the flavors.
- Add the chicken thighs to the pot, browning them on each side for about 5 minutes.
- Stir in the diced tomato, then add the brown rice, followed by the chicken broth. Bring to a boil.
- Once boiling, reduce the heat to low, cover the pot, and let it simmer for 25-30 minutes, or until the rice is cooked and the liquid is absorbed.
- Remove from heat and let it sit for 5 minutes before fluffing with a fork. Garnish with chopped cilantro before serving.
