Ingredients

  • Chicken thighs - 300 grams, boneless and skinless
  • Brown rice - 1 cup (200 grams)
  • Chicken broth - 2 cups (480 ml)
  • Chipotle peppers in adobo sauce - 2 peppers, chopped
  • Garlic - 2 cloves, minced
  • Onion - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Tomato - 1 medium, diced
  • Olive oil - 1 tablespoon (15 ml)
  • Cumin - 1 teaspoon (5 grams)
  • Oregano - 1 teaspoon (5 grams)
  • Salt - 1 teaspoon (5 grams)
  • Black pepper - 1/2 teaspoon (2 grams)
  • Cilantro - 1/4 cup (15 grams), chopped, for garnish

Steps

  1. In a medium pot, heat olive oil over medium heat. Add the diced onion and bell pepper, and sauté for about 3-4 minutes until softened.
  2. Add the minced garlic and cook for an additional 1 minute until fragrant.
  3. Stir in the chopped chipotle peppers, cumin, oregano, salt, and black pepper, cooking for another minute to combine the flavors.
  4. Add the chicken thighs to the pot, browning them on each side for about 5 minutes.
  5. Stir in the diced tomato, then add the brown rice, followed by the chicken broth. Bring to a boil.
  6. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 25-30 minutes, or until the rice is cooked and the liquid is absorbed.
  7. Remove from heat and let it sit for 5 minutes before fluffing with a fork. Garnish with chopped cilantro before serving.
