- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro - 2 tablespoons, chopped (for garnish)
Steps
- Heat the olive oil in a medium saucepan over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic, diced red and green bell peppers to the saucepan and cook for another 5 minutes until the peppers soften.
- Stir in the cumin powder, paprika, salt, and black pepper, cooking for an additional minute to toast the spices.
- Add the long-grain rice to the saucepan, stirring well to combine. Cook for 2-3 minutes, allowing the rice to absorb the flavors.
- Pour in the vegetable broth, bring to a boil, then reduce the heat to low. Cover the pan and simmer for 15-18 minutes, or until the rice is tender and the liquid is absorbed.
- Once cooked, remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and garnish with fresh cilantro before serving.
