Ingredients

  • Long-grain rice - 1 cup
  • Vegetable broth - 2 cups
  • Red bell pepper - 1 medium, diced
  • Green bell pepper - 1 medium, diced
  • Yellow onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped (for garnish)

Steps

  1. Heat the olive oil in a medium saucepan over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  2. Add the minced garlic, diced red and green bell peppers to the saucepan and cook for another 5 minutes until the peppers soften.
  3. Stir in the cumin powder, paprika, salt, and black pepper, cooking for an additional minute to toast the spices.
  4. Add the long-grain rice to the saucepan, stirring well to combine. Cook for 2-3 minutes, allowing the rice to absorb the flavors.
  5. Pour in the vegetable broth, bring to a boil, then reduce the heat to low. Cover the pan and simmer for 15-18 minutes, or until the rice is tender and the liquid is absorbed.
  6. Once cooked, remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and garnish with fresh cilantro before serving.
