  • Bell pepper - 1/2, diced
  • Tomato - 1 medium, chopped
  • Zucchini - 1 small, diced
  • Fish fillets (white fish like tilapia or cod) - 250 grams
  • Lime - 1, juiced
  • Cilantro - 2 tablespoons, chopped
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. In a medium saucepan, heat olive oil over medium heat. Add minced garlic and chopped onion, sautéing until the onion is translucent.
  2. Stir in the diced bell pepper, zucchini, and chopped tomato. Cook for about 5 minutes until softened.
  3. Add the brown rice, cumin, paprika, salt, and black pepper to the vegetable mixture, stirring well to combine.
  4. Pour in the water and bring to a boil. Once boiling, reduce heat to low, cover, and simmer for 20 minutes or until the rice is cooked and water is absorbed.
  5. While the rice is cooking, season the fish fillets with lime juice, salt, and pepper. Heat a non-stick skillet over medium-high heat.
  6. Cook the fish for about 3-4 minutes on each side until cooked through and flaky.
  7. Once the rice is done, fluff it with a fork and mix in the chopped cilantro. Serve the rice topped with the cooked fish and garnish with extra lime if desired.
