- Tomato - 1 medium, chopped
- Zucchini - 1 small, diced
- Fish fillets (white fish like tilapia or cod) - 250 grams
- Lime - 1, juiced
- Cilantro - 2 tablespoons, chopped
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- In a medium saucepan, heat olive oil over medium heat. Add minced garlic and chopped onion, sautéing until the onion is translucent.
- Stir in the diced bell pepper, zucchini, and chopped tomato. Cook for about 5 minutes until softened.
- Add the brown rice, cumin, paprika, salt, and black pepper to the vegetable mixture, stirring well to combine.
- Pour in the water and bring to a boil. Once boiling, reduce heat to low, cover, and simmer for 20 minutes or until the rice is cooked and water is absorbed.
- While the rice is cooking, season the fish fillets with lime juice, salt, and pepper. Heat a non-stick skillet over medium-high heat.
- Cook the fish for about 3-4 minutes on each side until cooked through and flaky.
- Once the rice is done, fluff it with a fork and mix in the chopped cilantro. Serve the rice topped with the cooked fish and garnish with extra lime if desired.
