Ingredients

  • Duck legs - 2 pieces (about 500g)
  • Cauliflower - 300g, riced
  • Chicken broth - 500ml
  • Green bell pepper - 1/2, diced
  • Garlic - 2 cloves, minced
  • Onion - 1/2, diced
  • Tomato - 1 medium, diced
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Cilantro - a handful, chopped (for garnish)

Steps

  1. Heat olive oil in a large skillet over medium heat. Season the duck legs with salt, black pepper, cumin, and paprika, then add them to the skillet, skin side down.
  2. Sear the duck legs for about 5-7 minutes until the skin is crispy, then flip and sear the other side for an additional 5-7 minutes.
  3. Remove the duck from the skillet and set aside. In the same skillet, add onion, garlic, and green bell pepper, sautéing until soft and fragrant, about 3-4 minutes.
  4. Add the diced tomato to the skillet and cook for another 2-3 minutes, stirring occasionally.
  5. Pour in the chicken broth and bring the mixture to a simmer. Return the duck legs to the skillet, cover, and let it simmer on low heat for about 25 minutes.
  6. While the duck is simmering, microwave or steam the riced cauliflower until tender, about 5-7 minutes.
  7. Once the duck is cooked, remove it from the skillet and shred the meat from the bones, discarding the bones.
  8. Mix the shredded duck back into the sauce in the skillet, then add the riced cauliflower to the skillet, stirring to combine everything well. Cook for an additional 3-5 minutes to heat through.
  9. Serve hot, garnished with chopped cilantro.
