  • Cilantro - 1/4 cup, chopped
  • Lime - 1, juiced

  • Pepper - 1/4 teaspoon
  • Ground cumin - 1/2 teaspoon
  • Chili powder - 1/2 teaspoon

Steps

  1. Rinse the rice under cold water until the water runs clear; drain and set aside.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until softened and fragrant, about 3-4 minutes.
  3. Add the diced nopales to the pot and cook for about 5 minutes until they begin to soften.
  4. Stir in the diced tomato, cumin, chili powder, salt, and pepper, cooking for an additional 2-3 minutes.
  5. Add the rinsed rice to the pot, stirring to combine with the vegetables and spices.
