Ingredients

  • Brown rice - 1 cup
  • Chicken breast (diced) - 200 grams
  • Mole sauce - 100 grams
  • Vegetable broth - 2 cups
  • Black beans (canned, drained) - 1/2 cup
  • Corn (frozen or canned) - 1/2 cup
  • Onion (chopped) - 1/2 medium onion
  • Garlic (minced) - 2 cloves
  • Olive oil - 1 tablespoon
  • Cilantro (chopped) - 2 tablespoons
  • Lime - 1 (cut into wedges)
  • Salt - to taste
  • Pepper - to taste

Steps

  1. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
  2. Add the diced chicken breast to the pot, cooking until browned on all sides, about 5-7 minutes.
  3. Stir in the brown rice and cook for another 2 minutes, allowing the rice to absorb some flavors.
  4. Pour in the vegetable broth and bring the mixture to a boil.
  5. Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes or until the rice is cooked and the liquid is absorbed.
  6. Stir in the mole sauce, black beans, and corn, mixing well to combine.
  7. Cook for an additional 5 minutes until everything is heated through.
  8. Remove from heat, garnish with chopped cilantro, and serve with lime wedges on the side.
