- Olive oil - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
- Add the long-grain white rice to the saucepan, stirring to coat the rice with the oil and onion mixture. Cook for 2-3 minutes until the rice is lightly toasted.
- Pour in the vegetable broth, fresh lime juice, lime zest, salt, and black pepper. Stir to combine and bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 18-20 minutes, or until the rice is cooked and has absorbed all the liquid.
- Remove the saucepan from heat and let it sit, covered, for an additional 5 minutes. Fluff the rice with a fork and stir in the chopped cilantro before serving.
