  • Vegetable broth - 2 cups (500ml)
  • Olive oil - 2 tablespoons (30ml)
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Bell pepper - 1/2 medium, diced
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the brown rice and lentils under cold water until the water runs clear.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing for about 2-3 minutes until softened.
  3. Add the diced carrot and bell pepper to the saucepan, cooking for another 3-4 minutes until the vegetables begin to soften.
  4. Stir in the cumin, paprika, salt, and black pepper, mixing well to coat the vegetables in the spices.
  5. Add the rinsed brown rice and lentils to the saucepan, stirring to combine with the vegetable mixture.
  6. Pour in the vegetable broth and bring the mixture to a boil.
  7. Once boiling, reduce the heat to low, cover the saucepan, and simmer for about 30 minutes or until the rice and lentils are tender and the liquid is absorbed.
  8. Remove from heat and let it sit, covered, for about 5 minutes.
  9. Fluff the arroz con lentejas with a fork and serve garnished with chopped cilantro.
