- Bell pepper - 1/2 medium, diced
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the brown rice and lentils under cold water until the water runs clear.
- In a medium saucepan, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing for about 2-3 minutes until softened.
- Add the diced carrot and bell pepper to the saucepan, cooking for another 3-4 minutes until the vegetables begin to soften.
- Stir in the cumin, paprika, salt, and black pepper, mixing well to coat the vegetables in the spices.
- Add the rinsed brown rice and lentils to the saucepan, stirring to combine with the vegetable mixture.
- Pour in the vegetable broth and bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover the saucepan, and simmer for about 30 minutes or until the rice and lentils are tender and the liquid is absorbed.
- Remove from heat and let it sit, covered, for about 5 minutes.
- Fluff the arroz con lentejas with a fork and serve garnished with chopped cilantro.
