- Unsweetened almond milk - 1/2 cup (120ml)
- Erythritol or Monk fruit sweetener - 3 tablespoons (45g)
- Vanilla extract - 1 teaspoon (5ml)
- Cinnamon powder - 1/2 teaspoon (1g)
- Salt - a pinch
- Chopped nuts (almonds or walnuts) - 2 tablespoons (30g) for garnish
Steps
- In a medium saucepan, combine the cauliflower rice, coconut milk, and almond milk over medium heat.
- Add erythritol or monk fruit sweetener, vanilla extract, cinnamon powder, and a pinch of salt to the mixture.
- Stir well to combine all the ingredients and bring to a gentle simmer.
