  • Coconut milk - 1 cup (240ml)
  • Unsweetened almond milk - 1/2 cup (120ml)
  • Erythritol or Monk fruit sweetener - 3 tablespoons (45g)
  • Vanilla extract - 1 teaspoon (5ml)
  • Cinnamon powder - 1/2 teaspoon (1g)
  • Salt - a pinch
  • Chopped nuts (almonds or walnuts) - 2 tablespoons (30g) for garnish

Steps

  1. In a medium saucepan, combine the cauliflower rice, coconut milk, and almond milk over medium heat.
  2. Add erythritol or monk fruit sweetener, vanilla extract, cinnamon powder, and a pinch of salt to the mixture.
  3. Stir well to combine all the ingredients and bring to a gentle simmer.
  4. Reduce the heat to low and cook for about 20 minutes, stirring occasionally, until the mixture thickens to a pudding-like consistency.
  5. Once thickened, remove from heat and let it cool slightly.
