Steps

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a medium saucepan, combine the rinsed rice, coconut milk, almond milk, cinnamon stick, and salt.
  3. Bring the mixture to a boil over medium heat, then reduce the heat to low and cover the saucepan.
  4. Simmer for about 20 minutes, stirring occasionally, until the rice is tender and the mixture has thickened.
  5. Remove the saucepan from heat and stir in the maple syrup and vanilla extract.
  6. Let the arroz con leche cool for a few minutes before removing the cinnamon stick.
