Ingredients

  • Long-grain rice - 1 cup (200g)
  • Huitlacoche (canned or fresh) - 150g
  • Vegetable broth - 2 cups (480ml)
  • Olive oil - 2 tablespoons (30ml)
  • Garlic, minced - 2 cloves
  • Onion, finely chopped - 1 small
  • Red bell pepper, diced - 1/2 medium
  • Cilantro, chopped - 1/4 cup
  • Lime juice - 1 tablespoon
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon

Steps

  1. Rinse the rice under cold water until the water runs clear, then drain and set aside.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until softened and translucent, about 3-4 minutes.
  3. Stir in the diced red bell pepper and cook for another 2 minutes.
  4. Add the rinsed rice to the pot, stirring well to coat the rice with the oil and vegetables, cooking for about 2 minutes until slightly toasted.
  5. Pour in the vegetable broth, and add the cumin, salt, and pepper. Bring to a boil.
  6. Once boiling, reduce the heat to low, cover the pot, and simmer for 15 minutes.
  7. After 15 minutes, remove the pot from heat (do not lift the lid), and let it sit for another 5 minutes.
  8. Add the huitlacoche, lime juice, and chopped cilantro to the rice, fluffing gently with a fork to combine.
  9. Serve warm, garnished with additional cilantro if desired.
