- Huitlacoche (canned or fresh) - 150g
- Vegetable broth - 2 cups (480ml)
- Olive oil - 2 tablespoons (30ml)
- Garlic, minced - 2 cloves
- Onion, finely chopped - 1 small
- Red bell pepper, diced - 1/2 medium
- Cilantro, chopped - 1/4 cup
- Lime juice - 1 tablespoon
- Cumin - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Pepper - 1/4 teaspoon
Steps
- Rinse the rice under cold water until the water runs clear, then drain and set aside.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until softened and translucent, about 3-4 minutes.
- Stir in the diced red bell pepper and cook for another 2 minutes.
- Add the rinsed rice to the pot, stirring well to coat the rice with the oil and vegetables, cooking for about 2 minutes until slightly toasted.
- Pour in the vegetable broth, and add the cumin, salt, and pepper. Bring to a boil.
- Once boiling, reduce the heat to low, cover the pot, and simmer for 15 minutes.
- After 15 minutes, remove the pot from heat (do not lift the lid), and let it sit for another 5 minutes.
- Add the huitlacoche, lime juice, and chopped cilantro to the rice, fluffing gently with a fork to combine.
- Serve warm, garnished with additional cilantro if desired.
