Ingredients

  • Long-grain white rice - 1 cup
  • Water - 2 cups
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Tomato - 1 medium, diced
  • Green bell pepper - 1/2, diced
  • Cumin - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Eggs - 4 large
  • Fresh cilantro - 1/4 cup, chopped (for garnish)

Steps

  1. Rinse the rice under cold water until the water runs clear to remove excess starch.
  2. In a medium pot, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and sauté until translucent, about 3 minutes.
  3. Add the minced garlic, diced tomato, and diced green bell pepper to the pot. Cook for an additional 3-4 minutes until the vegetables are tender.
  4. Stir in the rinsed rice, cumin, salt, and black pepper. Cook for 2-3 minutes, stirring frequently, until the rice is slightly toasted.
  5. Pour in 2 cups of water and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is cooked and the water is absorbed.
  6. While the rice is cooking, heat a non-stick skillet over medium heat. Crack the eggs into the skillet and cook to your desired doneness (sunny-side-up or scrambled).
  7. Once the rice is done, fluff it with a fork and serve it on plates. Top each serving with two cooked eggs.
