Ingredients

  • Long-grain white rice - 1 cup
  • Mushrooms (cremini or button) - 200 grams, sliced
  • Vegetable broth - 2 cups
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped (for garnish)

Steps

  1. Heat the olive oil in a medium saucepan over medium heat.
  2. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Stir in the minced garlic, cumin, paprika, salt, and black pepper. Sauté for an additional minute until fragrant.
  4. Add the sliced mushrooms to the saucepan and cook for about 5-7 minutes, until they are softened and have released their moisture.
  5. Stir in the rice and cook for another 2 minutes, allowing it to absorb the flavors.
  6. Pour in the vegetable broth, bring to a boil, then reduce heat to low and cover the saucepan.
  7. Simmer for 15-18 minutes, or until the rice is cooked and the liquid is absorbed.
  8. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.
  9. Garnish with chopped cilantro before serving.
