- Canned black beans - 200 grams, drained and rinsed
- Vegetable broth - 250 milliliters
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - a handful, chopped (for garnish)
Steps
- In a medium saucepan, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.
- Add the minced garlic and cook for an additional 1 minute until fragrant.
- Stir in the cumin and chili powder, cooking for another 30 seconds to release the spices' aroma.
- Add the rice to the saucepan, stirring well to coat the grains with the oil and spices.
- Pour in the vegetable broth, season with salt and black pepper to taste, and bring to a boil.
- Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15 minutes, or until the rice is cooked and all the liquid is absorbed.
- In the last 5 minutes of cooking, gently fold in the drained black beans to heat them through.
- Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork before serving.
- Garnish with chopped fresh cilantro and serve warm.
