Ingredients

  • Long-grain white rice - 100 grams
  • Canned black beans - 200 grams, drained and rinsed
  • Vegetable broth - 250 milliliters
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - a handful, chopped (for garnish)

Steps

  1. In a medium saucepan, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.
  2. Add the minced garlic and cook for an additional 1 minute until fragrant.
  3. Stir in the cumin and chili powder, cooking for another 30 seconds to release the spices' aroma.
  4. Add the rice to the saucepan, stirring well to coat the grains with the oil and spices.
  5. Pour in the vegetable broth, season with salt and black pepper to taste, and bring to a boil.
  6. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15 minutes, or until the rice is cooked and all the liquid is absorbed.
  7. In the last 5 minutes of cooking, gently fold in the drained black beans to heat them through.
  8. Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork before serving.
  9. Garnish with chopped fresh cilantro and serve warm.
