- Fresh spinach - 2 cups, chopped
- Cumin - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lime - 1, juiced
- Fresh cilantro - 1/4 cup, chopped (for garnish)
Steps
- Rinse the long-grain rice under cold water until the water runs clear, then set aside.
- In a medium saucepan, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic, diced red bell pepper, and diced carrot. Cook for another 3-4 minutes until the vegetables are softened.
- Stir in the rinsed rice, cumin, smoked paprika, salt, and black pepper, cooking for an additional 2 minutes to toast the rice slightly.
- Pour in the vegetable broth, bring to a boil, then reduce to low heat and cover. Simmer for 15-20 minutes or until the rice is cooked and liquid is absorbed.
- Once the rice is cooked, gently fold in the chopped spinach and lime juice, allowing the spinach to wilt.
- Serve warm, garnished with fresh cilantro.
