  • Smoked paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lime - 1, juiced
  • Fresh cilantro - 1/4 cup, chopped (for garnish)

Steps

  1. Rinse the long-grain rice under cold water until the water runs clear, then set aside.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic, diced red bell pepper, and diced carrot. Cook for another 3-4 minutes until the vegetables are softened.
  4. Stir in the rinsed rice, cumin, smoked paprika, salt, and black pepper, cooking for an additional 2 minutes to toast the rice slightly.
  5. Pour in the vegetable broth, bring to a boil, then reduce to low heat and cover. Simmer for 15-20 minutes or until the rice is cooked and liquid is absorbed.
  6. Once the rice is cooked, gently fold in the chopped spinach and lime juice, allowing the spinach to wilt.
  7. Serve warm, garnished with fresh cilantro.
