  • Cilantro - 1/4 cup, chopped
  • Lime juice - 1 tablespoon
  • Cumin - 1 teaspoon
  • Chili powder - 1/2 teaspoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Heat the olive oil in a medium saucepan over medium heat.
  2. Add the diced onion and sauté until translucent, about 3-4 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the rice to the saucepan and toast for 2-3 minutes, stirring frequently.
  5. Pour in the vegetable broth and bring to a boil.
  6. Add the corn kernels, cumin, chili powder, salt, and pepper to the pot.
  7. Reduce the heat to low, cover the saucepan, and simmer for 15-20 minutes, or until the rice is cooked and has absorbed the broth.
  8. Remove from heat and let it sit covered for 5 minutes.
  9. Fluff the rice with a fork and stir in the lime juice and chopped cilantro before serving.
