- Beef short ribs - 400 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, diced
- Garlic - 3 cloves, minced
- Carrot - 1 medium, diced
- Bell pepper - 1 medium, diced
- Tomato - 2 medium, chopped
- Long-grain rice - 1 cup
- Beef broth - 2 cups
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
Steps
- In a large pot, heat the olive oil over medium-high heat. Add the beef short ribs and brown them on all sides, about 5-7 minutes. Remove the ribs and set aside.
- In the same pot, add the diced onion, garlic, carrot, and bell pepper. Sauté until the vegetables are softened, about 5 minutes.
- Add the chopped tomatoes, cumin, paprika, salt, and black pepper to the pot. Stir well and cook for another 3 minutes until the tomatoes begin to break down.
- Return the short ribs to the pot and add the long-grain rice, mixing everything together.
- Pour in the beef broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for 30-35 minutes, or until the rice is cooked and the short ribs are tender.
- Once cooked, remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork and stir in the chopped cilantro and lime juice before serving.
