  • Water - 100 ml
  • Coconut sugar - 1 tablespoon
  • Cinnamon stick - 1
  • Fresh cilantro - 2 tablespoons, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Rinse the basmati rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, combine the rinsed rice, coconut milk, water, coconut sugar, salt, black pepper, and the cinnamon stick.
  3. Bring the mixture to a boil over medium-high heat, then reduce the heat to low and cover the saucepan.
  4. Simmer for about 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  5. Remove the saucepan from heat and let it sit, covered, for an additional 5 minutes to allow the rice to steam.
  6. Fluff the rice with a fork, remove the cinnamon stick, and stir in the chopped cilantro before serving.
