Ingredients

  • Long-grain white rice - 1 cup
  • Vegetable broth - 2 cups
  • Fresh cilantro - 1 cup, packed
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Lime juice - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Green peas - 1/2 cup (optional)

Steps

  1. Rinse the rice under cold water until the water runs clear, then drain well.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and sauté for another minute until fragrant.
  4. Stir in the rice and cook for 2-3 minutes, allowing it to toast slightly.
  5. Pour in the vegetable broth, lime juice, salt, and pepper. Bring to a boil.
  6. Once boiling, reduce the heat to low, cover the pan, and simmer for 15 minutes or until the rice is cooked and liquid is absorbed.
  7. While the rice is cooking, blend the cilantro with a splash of water in a blender until smooth.
  8. Once the rice is done, remove it from the heat and let it sit for 5 minutes. Fluff with a fork.
  9. Gently fold in the cilantro puree and green peas (if using) into the rice until well combined.
  10. Serve warm, garnished with additional cilantro and lime wedges if desired.
