- Long-grain white rice - 1 cup
- Vegetable broth - 2 cups
- Fresh cilantro - 1 cup, packed
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Lime juice - 2 tablespoons
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Green peas - 1/2 cup (optional)
Steps
- Rinse the rice under cold water until the water runs clear, then drain well.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and sauté for another minute until fragrant.
- Stir in the rice and cook for 2-3 minutes, allowing it to toast slightly.
- Pour in the vegetable broth, lime juice, salt, and pepper. Bring to a boil.
- Once boiling, reduce the heat to low, cover the pan, and simmer for 15 minutes or until the rice is cooked and liquid is absorbed.
- While the rice is cooking, blend the cilantro with a splash of water in a blender until smooth.
- Once the rice is done, remove it from the heat and let it sit for 5 minutes. Fluff with a fork.
- Gently fold in the cilantro puree and green peas (if using) into the rice until well combined.
- Serve warm, garnished with additional cilantro and lime wedges if desired.
