  • Onion - 1 small, chopped
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Vegetable broth - 400 milliliters
  • Salt - to taste
  • Black pepper - to taste
  • Cilantro - for garnish

Steps

  1. Heat the olive oil in a medium saucepan over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until soft and fragrant, about 3-4 minutes.
  3. Add the sliced chorizo to the pan and cook until browned, about 5 minutes.
  4. Stir in the diced red bell pepper, cooking for another 2-3 minutes until softened.
  5. Add the brown rice, cumin, paprika, salt, and black pepper, stirring to combine and toast the rice for 1-2 minutes.
