- Chipotle peppers in adobo sauce - 2 peppers, chopped

- Onion - 1 small, finely chopped

- Cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
Steps
- Rinse the rice under cold water until the water runs clear, then drain.
- In a medium saucepan, heat the olive oil over medium heat and add the chopped onion. Sauté until translucent, about 3-4 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the rinsed rice, chopped chipotle peppers, cumin, salt, and black pepper. Cook for about 2 minutes, stirring frequently to coat the rice with the oil and spices.
- Pour in the vegetable broth and bring to a boil. Once boiling, reduce heat to low, cover, and let simmer for 18-20 minutes until the rice is tender and the liquid is absorbed.
- Remove from heat and let it sit, covered, for 5 minutes. Fluff rice with a fork, then stir in lime juice and chopped cilantro before serving.
