- Dried guajillo chiles - 3
- Dried ancho chiles - 2
- Garlic - 2 cloves
- Onion - 1 small, diced
- Olive oil - 1 tablespoon
- Cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
Steps
- Begin by removing the stems and seeds from the guajillo and ancho chiles. Toast the chiles in a dry skillet over medium heat for about 2-3 minutes until fragrant, then soak them in hot water for 10 minutes.
- While the chiles are soaking, heat the olive oil in a medium saucepan over medium heat. Add the diced onion and sauté for 5 minutes until translucent.
- Add the minced garlic to the saucepan and cook for an additional minute, stirring frequently to avoid burning.
- Drain the chiles and blend them with 1/4 cup of the vegetable broth until smooth. Pour this mixture into the saucepan with the onions and garlic, stirring to combine.
- Add the rice to the saucepan and toast it for 2-3 minutes, stirring frequently until it is slightly golden.
- Pour in the remaining vegetable broth, cumin, salt, and black pepper. Bring the mixture to a boil, then reduce heat to low and cover. Cook for 15-18 minutes, or until the rice is tender and the liquid is absorbed.
- Once cooked, remove from heat and let it sit covered for another 5 minutes. Fluff the rice with a fork and stir in the lime juice and chopped cilantro before serving.
