  • Dried guajillo chiles - 3
  • Dried ancho chiles - 2
  • Garlic - 2 cloves
  • Onion - 1 small, diced
  • Olive oil - 1 tablespoon
  • Cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced

Steps

  1. Begin by removing the stems and seeds from the guajillo and ancho chiles. Toast the chiles in a dry skillet over medium heat for about 2-3 minutes until fragrant, then soak them in hot water for 10 minutes.
  2. While the chiles are soaking, heat the olive oil in a medium saucepan over medium heat. Add the diced onion and sauté for 5 minutes until translucent.
  3. Add the minced garlic to the saucepan and cook for an additional minute, stirring frequently to avoid burning.
  4. Drain the chiles and blend them with 1/4 cup of the vegetable broth until smooth. Pour this mixture into the saucepan with the onions and garlic, stirring to combine.
  5. Add the rice to the saucepan and toast it for 2-3 minutes, stirring frequently until it is slightly golden.
  6. Pour in the remaining vegetable broth, cumin, salt, and black pepper. Bring the mixture to a boil, then reduce heat to low and cover. Cook for 15-18 minutes, or until the rice is tender and the liquid is absorbed.
  7. Once cooked, remove from heat and let it sit covered for another 5 minutes. Fluff the rice with a fork and stir in the lime juice and chopped cilantro before serving.
