- Long-grain rice - 150 grams
- Vegetable broth - 400 ml
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, diced
- Bell peppers (mixed colors) - 2 medium, halved and seeded
- Corn kernels - 100 grams (fresh or frozen)
- Black beans - 100 grams, drained and rinsed
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chopped cilantro - 2 tablespoons, for garnish
- Lime wedges - for serving
Steps
- Rinse the rice under cold water until the water runs clear; drain and set aside.
- In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and minced garlic, sautéing until soft and translucent, about 3-4 minutes.
- Add the rice to the saucepan, stirring to coat in the oil and onion mixture for about 2 minutes.
- Pour in the vegetable broth, cumin, paprika, salt, and black pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes or until the rice is tender and liquid is absorbed.
- While the rice cooks, preheat the oven to 180°C (350°F).
- In a bowl, mix the corn and black beans, seasoning with salt and pepper to taste. Stuff each halved bell pepper with this mixture.
- In an oven-safe dish, place the stuffed peppers upright. Drizzle with the remaining tablespoon of olive oil and cover with aluminum foil.
- Bake in the preheated oven for 20-25 minutes until the peppers are tender.
- Once the rice is done, fluff it with a fork and serve it on plates topped with the stuffed peppers. Garnish with chopped cilantro and serve with lime wedges.
