- Cauliflower - 400 grams (1 medium head)
- Poblano peppers - 2 large
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, diced
- Cumin - 1 teaspoon
- Oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Vegetable broth - 240 ml (1 cup)
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
Steps
- Preheat the oven to 200°C (400°F).
- Cut the poblano peppers in half lengthwise and remove the seeds. Place them on a baking tray, skin side up, and roast in the oven for about 15-20 minutes until the skins are charred.
- While the peppers are roasting, remove the leaves and stem from the cauliflower and cut it into florets. In a food processor, pulse the florets until they resemble rice grains.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook for about 3-4 minutes until translucent.
- Add the minced garlic and cook for another minute until fragrant.
- Stir in the cauliflower rice, cumin, oregano, salt, and black pepper. Cook for about 5 minutes, stirring occasionally.
- Once the poblano peppers are done roasting, remove them from the oven and let them cool slightly. Peel off the charred skins and chop the peppers into small pieces.
- Add the chopped poblano peppers and vegetable broth to the skillet with the cauliflower rice. Stir well and let it simmer for about 5-7 minutes until the cauliflower is tender and has absorbed the flavors.
- Remove from heat, stir in the lime juice and chopped cilantro. Serve hot.
