Ingredients

  • Cauliflower - 400 grams (1 medium head)
  • Poblano peppers - 2 large
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Cumin - 1 teaspoon
  • Oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable broth - 240 ml (1 cup)
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the poblano peppers in half lengthwise and remove the seeds. Place them on a baking tray, skin side up, and roast in the oven for about 15-20 minutes until the skins are charred.
  3. While the peppers are roasting, remove the leaves and stem from the cauliflower and cut it into florets. In a food processor, pulse the florets until they resemble rice grains.
  4. In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook for about 3-4 minutes until translucent.
  5. Add the minced garlic and cook for another minute until fragrant.
  6. Stir in the cauliflower rice, cumin, oregano, salt, and black pepper. Cook for about 5 minutes, stirring occasionally.
  7. Once the poblano peppers are done roasting, remove them from the oven and let them cool slightly. Peel off the charred skins and chop the peppers into small pieces.
  8. Add the chopped poblano peppers and vegetable broth to the skillet with the cauliflower rice. Stir well and let it simmer for about 5-7 minutes until the cauliflower is tender and has absorbed the flavors.
  9. Remove from heat, stir in the lime juice and chopped cilantro. Serve hot.
