  • Chicharrón (pork cracklings) - 100 grams
  • Chicken broth - 2 cups
  • Olive oil - 1 tablespoon
  • Onion (finely chopped) - 1/2 medium
  • Garlic (minced) - 2 cloves
  • Tomato (diced) - 1 medium
  • Green peas - 1/2 cup
  • Cilantro (chopped) - 2 tablespoons
  • Lime (juiced) - 1/2
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Rinse the rice under cold water until the water runs clear, then drain.
  2. In a large skillet, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until the onion is translucent.
  3. Add the diced tomato to the skillet and cook for another 2 minutes until softened.
  4. Stir in the rice and cook for 2-3 minutes, allowing it to toast slightly.
  5. Pour in the chicken broth, add the green peas, and season with salt and pepper. Bring to a boil.
  6. Reduce heat to low, cover, and simmer for 18-20 minutes, or until the rice is cooked and the liquid is absorbed.
  7. While the rice is cooking, chop the chicharrón into bite-sized pieces and set aside.
  8. Once the rice is done, remove it from heat and let it sit covered for 5 minutes.
  9. Fluff the rice with a fork, then gently fold in the chicharrón, chopped cilantro, and lime juice.
  10. Serve warm, garnished with extra cilantro if desired.
