- Chicharrón (pork cracklings) - 100 grams
- Chicken broth - 2 cups

- Garlic (minced) - 2 cloves
- Tomato (diced) - 1 medium
- Green peas - 1/2 cup
- Cilantro (chopped) - 2 tablespoons
- Lime (juiced) - 1/2
- Salt - to taste
- Pepper - to taste
Steps
- Rinse the rice under cold water until the water runs clear, then drain.
- In a large skillet, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until the onion is translucent.
- Add the diced tomato to the skillet and cook for another 2 minutes until softened.
- Stir in the rice and cook for 2-3 minutes, allowing it to toast slightly.

- Once the rice is done, remove it from heat and let it sit covered for 5 minutes.
- Fluff the rice with a fork, then gently fold in the chicharrón, chopped cilantro, and lime juice.
- Serve warm, garnished with extra cilantro if desired.
