- Cumin - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro - 2 tablespoons, chopped (for garnish)
Steps
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté for 2-3 minutes until translucent.
- Add the minced garlic and sliced mushrooms to the pot. Cook for an additional 5-7 minutes until the mushrooms are tender and have released their moisture.
- Stir in the cumin, paprika, salt, and black pepper, and cook for another minute to combine the flavors.
- Add the rice to the pot and stir well to coat the rice with the oil and spices. Toast the rice for about 2 minutes.
- Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15 minutes, or until the rice is cooked and all the liquid is absorbed.
- Remove the pot from heat and let it sit, covered, for an additional 5 minutes. Fluff the rice with a fork before serving.
- Garnish with fresh cilantro and serve warm.
