  • Cumin - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped (for garnish)

Steps

  1. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté for 2-3 minutes until translucent.
  2. Add the minced garlic and sliced mushrooms to the pot. Cook for an additional 5-7 minutes until the mushrooms are tender and have released their moisture.
  3. Stir in the cumin, paprika, salt, and black pepper, and cook for another minute to combine the flavors.
  4. Add the rice to the pot and stir well to coat the rice with the oil and spices. Toast the rice for about 2 minutes.
  5. Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15 minutes, or until the rice is cooked and all the liquid is absorbed.
  6. Remove the pot from heat and let it sit, covered, for an additional 5 minutes. Fluff the rice with a fork before serving.
  7. Garnish with fresh cilantro and serve warm.
