Ingredients
- Long-grain white rice - 1 cup
- Vegetable broth - 2 cups
- Frozen green peas - 1/2 cup
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Cumin - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro - for garnish
- Lime - 1, cut into wedges
Steps
- Rinse the rice under cold water until the water runs clear, then drain well.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and sauté for another 1 minute until fragrant.
- Stir in the cumin, salt, and black pepper, and cook for 30 seconds to toast the spices.
- Add the rinsed rice to the pan and stir to coat it with the oil and spices, cooking for 2-3 minutes until the rice is lightly toasted.
- Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes.
- After 15 minutes, add the frozen green peas on top of the rice (do not stir) and cover again. Cook for an additional 5 minutes.
- Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork before serving.
- Garnish with fresh cilantro and serve with lime wedges on the side.
