Ingredients

  • Long-grain white rice - 1 cup
  • Vegetable broth - 2 cups
  • Frozen green peas - 1/2 cup
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Cumin - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - for garnish
  • Lime - 1, cut into wedges

Steps

  1. Rinse the rice under cold water until the water runs clear, then drain well.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and sauté for another 1 minute until fragrant.
  4. Stir in the cumin, salt, and black pepper, and cook for 30 seconds to toast the spices.
  5. Add the rinsed rice to the pan and stir to coat it with the oil and spices, cooking for 2-3 minutes until the rice is lightly toasted.
  6. Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes.
  7. After 15 minutes, add the frozen green peas on top of the rice (do not stir) and cover again. Cook for an additional 5 minutes.
  8. Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork before serving.
  9. Garnish with fresh cilantro and serve with lime wedges on the side.
