- Tomato (diced) - 1 medium

Steps
- Rinse the rice under cold water until the water runs clear, then drain and set aside.
- In a medium saucepan, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
- Stir in the diced bell pepper and tomato, cooking for another 3-4 minutes until softened.
- Add the rinsed rice to the saucepan, stirring to coat the rice with the oil and vegetables.
- Pour in the beer and vegetable broth, then add the salt, black pepper, and cumin. Stir well.
- Bring the mixture to a boil, then reduce the heat to low. Cover the saucepan with a lid.
- Let the rice simmer for about 18-20 minutes, or until the liquid is absorbed and the rice is tender.
- Once cooked, remove from heat and fluff the rice with a fork.
- Stir in the chopped cilantro and lime juice before serving.
