  • Olive oil - 2 tablespoons

  • Bell pepper (diced) - 1/2 medium
  • Tomato (diced) - 1 medium
  • Cilantro (chopped) - 1/4 cup
  • Lime juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cumin - 1/2 teaspoon

Steps

  1. Rinse the rice under cold water until the water runs clear, then drain and set aside.
  2. In a medium saucepan, heat the olive oil over medium heat.
  3. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
  4. Stir in the diced bell pepper and tomato, cooking for another 3-4 minutes until softened.
  5. Add the rinsed rice to the saucepan, stirring to coat the rice with the oil and vegetables.
  6. Pour in the beer and vegetable broth, then add the salt, black pepper, and cumin. Stir well.
  7. Bring the mixture to a boil, then reduce the heat to low. Cover the saucepan with a lid.
  8. Let the rice simmer for about 18-20 minutes, or until the liquid is absorbed and the rice is tender.
  9. Once cooked, remove from heat and fluff the rice with a fork.
  10. Stir in the chopped cilantro and lime juice before serving.
