Ingredients

  • Basmati rice - 1 cup
  • Water - 2 cups
  • Carne asada (flank steak) - 200 grams
  • Olive oil - 1 tablespoon
  • Garlic (minced) - 2 cloves
  • Onion (chopped) - 1 small
  • Bell pepper (chopped) - 1/2 medium
  • Tomato (diced) - 1 medium
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cilantro (chopped) - 2 tablespoons
  • Lime (juiced) - 1 medium

Steps

  1. Marinate the carne asada with olive oil, cumin, chili powder, salt, and black pepper for at least 15 minutes.
  2. In a medium pot, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened, about 3 minutes.
  3. Stir in the chopped bell pepper and sauté for another 2 minutes before adding the diced tomato. Cook for an additional 2 minutes until the tomatoes start breaking down.
  4. Add the basmati rice to the pot, stirring it into the vegetable mixture to coat well. Pour in the water and bring to a boil.
  5. Once boiling, reduce the heat to low, cover, and let simmer for 15 minutes or until the rice is cooked and water is absorbed.
  6. While the rice is cooking, grill the marinated carne asada on a preheated grill or grill pan for about 5-6 minutes per side, or until desired doneness. Let it rest for a few minutes before slicing it thinly.
  7. Fluff the rice with a fork and stir in the chopped cilantro and lime juice.
  8. To serve, plate the rice and top with the sliced carne asada. Garnish with additional cilantro if desired.
