- Bell pepper (chopped) - 1/2 medium
- Tomato (diced) - 1 medium
- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cilantro (chopped) - 2 tablespoons
- Lime (juiced) - 1 medium
Steps
- Marinate the carne asada with olive oil, cumin, chili powder, salt, and black pepper for at least 15 minutes.
- In a medium pot, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened, about 3 minutes.
- Stir in the chopped bell pepper and sauté for another 2 minutes before adding the diced tomato. Cook for an additional 2 minutes until the tomatoes start breaking down.
- Add the basmati rice to the pot, stirring it into the vegetable mixture to coat well. Pour in the water and bring to a boil.
- Once boiling, reduce the heat to low, cover, and let simmer for 15 minutes or until the rice is cooked and water is absorbed.
- While the rice is cooking, grill the marinated carne asada on a preheated grill or grill pan for about 5-6 minutes per side, or until desired doneness. Let it rest for a few minutes before slicing it thinly.
- Fluff the rice with a fork and stir in the chopped cilantro and lime juice.
- To serve, plate the rice and top with the sliced carne asada. Garnish with additional cilantro if desired.
