- Onion - 1 small, chopped
- Bell pepper - 1 medium, chopped
- Tomato - 1 medium, diced
- Chicken broth - 500 milliliters
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Fresh cilantro - for garnish
Steps
- Heat the olive oil in a large skillet over medium heat. Add the diced chicken breast and cook until browned, about 5 minutes.
- Add the sliced chorizo and cook for an additional 3 minutes until it starts to release its oils.
- Stir in the minced garlic, chopped onion, and bell pepper. Sauté for 3-4 minutes until the vegetables are soft.
- Add the diced tomato, cumin, paprika, black pepper, and salt. Mix well and cook for another 2 minutes.
