Ingredients

  • Long-grain rice - 200 grams
  • Chicken breast - 150 grams, diced
  • Chorizo - 100 grams, sliced
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, chopped
  • Bell pepper - 1 medium, chopped
  • Tomato - 1 medium, diced
  • Chicken broth - 500 milliliters
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Fresh cilantro - for garnish

Steps

  1. Heat the olive oil in a large skillet over medium heat. Add the diced chicken breast and cook until browned, about 5 minutes.
  2. Add the sliced chorizo and cook for an additional 3 minutes until it starts to release its oils.
  3. Stir in the minced garlic, chopped onion, and bell pepper. Sauté for 3-4 minutes until the vegetables are soft.
  4. Add the diced tomato, cumin, paprika, black pepper, and salt. Mix well and cook for another 2 minutes.
  5. Add the rice to the skillet, stirring to coat it with the spices and meat mixture. Cook for 1-2 minutes until the rice is slightly toasted.
  6. Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and has absorbed the liquid.
  7. Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork and garnish with fresh cilantro before serving.
