  • Onion - 1 small, diced
  • Bell pepper - 1/2, diced
  • Tomato - 1 medium, diced
  • Chicken or vegetable broth - 2 cups
  • Cilantro - 1/4 cup, chopped
  • Lime juice - 1 tablespoon
  • Cumin - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak in water for 20 minutes.
  2. In a medium saucepan, heat olive oil over medium heat. Add diced onion and bell pepper, sauté until softened, about 3-4 minutes.
  3. Add minced garlic and diced tomato to the saucepan, cooking for another 2 minutes until fragrant.
  4. Stir in the cumin, paprika, salt, and black pepper, mixing well.
  5. Drain the soaked rice and add it to the saucepan, stirring to coat the rice with the oil and spices.
  6. Pour in the chicken or vegetable broth and bring to a boil. Reduce the heat to low, cover, and simmer for 15 minutes.
  7. After 15 minutes, remove the lid and gently fold in the crab meat, cilantro, and lime juice.
  8. Cover again and cook for an additional 5 minutes to allow the flavors to meld.
  9. Remove from heat, let it sit covered for another 5 minutes, then fluff the rice with a fork before serving.
