Ingredients

  • Brown rice - 1 cup
  • Shrimp (peeled and deveined) - 200 grams
  • Vegetable broth - 2 cups
  • Garlic (minced) - 2 cloves
  • Onion (finely chopped) - 1 small
  • Red bell pepper (diced) - 1/2
  • Green peas (fresh or frozen) - 1/2 cup
  • Tomato (diced) - 1 medium
  • Olive oil - 1 tablespoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lime (juiced) - 1
  • Fresh cilantro (chopped) - 2 tablespoons

Steps

  1. Rinse the brown rice under cold water until the water runs clear, then set aside.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Stir in the diced red bell pepper, and cook for an additional 2-3 minutes until softened.
  4. Add the rinsed brown rice to the saucepan and stir to coat with the oil and vegetables.
  5. Pour in the vegetable broth, and add the cumin, paprika, salt, and black pepper. Bring to a boil.
  6. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 20 minutes or until the rice is tender and the liquid is absorbed.
  7. In the last 5 minutes of cooking, add the shrimp, diced tomato, and green peas on top of the rice. Cover again and allow the shrimp to cook until they turn pink and opaque.
  8. Remove from heat, squeeze lime juice over the dish, and gently fluff the rice with a fork. Stir in chopped cilantro before serving.
