Ingredients

  • Vegetable broth - 2 cups
  • Olive oil - 1 tablespoon
  • Cumin - 1/2 teaspoon
  • Chili powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced

Steps

  1. Rinse the long-grain white rice under cold water until the water runs clear, then drain well.
  2. In a medium saucepan, heat olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until softened.
  3. Add the minced garlic, cumin, chili powder, salt, and black pepper to the saucepan, and cook for an additional 1-2 minutes until fragrant.
  4. Stir in the rinsed rice and toast for about 2 minutes, stirring frequently.
  5. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low, cover, and let it simmer for 15 minutes.
  6. After 15 minutes, add the diced zucchini on top of the rice, cover again, and cook for an additional 5-7 minutes until the zucchini is tender and the rice is cooked through.
  7. Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork, then stir in the lime juice and chopped cilantro before serving.
