- Long-grain white rice - 1 cup
- Zucchini - 1 medium, diced

- Garlic - 2 cloves, minced
- Vegetable broth - 2 cups
- Olive oil - 1 tablespoon
- Cumin - 1/2 teaspoon
- Chili powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
Steps
- Rinse the long-grain white rice under cold water until the water runs clear, then drain well.
- In a medium saucepan, heat olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until softened.
- Add the minced garlic, cumin, chili powder, salt, and black pepper to the saucepan, and cook for an additional 1-2 minutes until fragrant.
- Stir in the rinsed rice and toast for about 2 minutes, stirring frequently.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low, cover, and let it simmer for 15 minutes.
- After 15 minutes, add the diced zucchini on top of the rice, cover again, and cook for an additional 5-7 minutes until the zucchini is tender and the rice is cooked through.
- Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork, then stir in the lime juice and chopped cilantro before serving.
