Ingredients

  • Long-grain rice - 1 cup

  • Raw peanuts - 1/2 cup
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cilantro - 1/4 cup, chopped
  • Lime - 1, juiced

Steps

  1. Rinse the long-grain rice under cold water until the water runs clear, then drain.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
  3. Add the minced garlic, cumin, paprika, salt, and black pepper to the pan, and cook for an additional 1-2 minutes until fragrant.
  4. Stir in the rinsed rice and cook for 2-3 minutes, allowing the rice to be coated with the spices and oil.
  5. Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes.
  6. While the rice is cooking, toast the raw peanuts in a dry skillet over medium heat for about 5-7 minutes, stirring frequently until golden and fragrant. Remove from heat and let cool.
  7. Once the rice is cooked, remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and stir in the toasted peanuts, chopped cilantro, and lime juice.
  8. Serve warm, garnished with additional cilantro if desired.
