  • Garlic (minced) - 2 cloves
  • Cumin powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Green peas (frozen) - 1/2 cup
  • Fresh cilantro (chopped) - 2 tablespoons
  • Lime (juiced) - 1 tablespoon

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic, cumin powder, turmeric powder, salt, and black pepper, and sauté for another minute until fragrant.
  4. Drain the soaked rice and add it to the saucepan, stirring to coat the rice with the oil and spices.
  5. Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for 15 minutes.
  6. After 15 minutes, add the sliced almonds and green peas to the rice. Cover and cook for an additional 5 minutes, or until the rice is tender and the liquid is absorbed.
  7. Remove the saucepan from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork, then stir in the chopped cilantro and lime juice before serving.
