Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic, cumin powder, turmeric powder, salt, and black pepper, and sauté for another minute until fragrant.
- Drain the soaked rice and add it to the saucepan, stirring to coat the rice with the oil and spices.
- Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for 15 minutes.
- After 15 minutes, add the sliced almonds and green peas to the rice. Cover and cook for an additional 5 minutes, or until the rice is tender and the liquid is absorbed.
- Remove the saucepan from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork, then stir in the chopped cilantro and lime juice before serving.
