Ingredients
- Long-grain white rice - 1 cup
- Vegetable broth - 2 cups
- Garlic cloves - 4, minced
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Bell pepper - 1/2, finely chopped
- Cilantro - 1/4 cup, chopped
- Lime - 1, juiced
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- Rinse the long-grain white rice under cold water until the water runs clear to remove excess starch.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and bell pepper, sautéing until they are softened, about 3-4 minutes.
- Add the minced garlic to the saucepan and sauté for an additional 1-2 minutes until fragrant, being careful not to burn it.
- Stir in the rinsed rice, ensuring it gets coated with the oil and mixed with the vegetables. Cook for about 2-3 minutes until the rice is slightly toasted.
- Pour in the vegetable broth, and add salt and black pepper. Stir to combine, then bring to a boil.
- Once boiling, reduce the heat to low, cover the saucepan with a lid, and let it simmer for about 18-20 minutes or until the rice is cooked and the liquid is absorbed.
- Remove the saucepan from the heat and let it sit, covered, for an additional 5 minutes to steam.
- Fluff the rice with a fork, stir in the chopped cilantro and lime juice, and adjust seasoning if necessary. Serve warm.
