- Cumin - 1 teaspoon

- Black pepper - 1/4 teaspoon
- Avocado - 1 medium, sliced
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
Steps
- Rinse the long-grain rice under cold water until the water runs clear, then drain.
- In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and diced onion, sautéing until the onion becomes translucent.
- Add the diced bell pepper and tomato to the saucepan, cooking for an additional 3-4 minutes until softened.
- Stir in the rinsed rice, cumin, salt, and black pepper, allowing the rice to toast for 1-2 minutes.
- Pour in the water and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and water is absorbed.
- Remove the saucepan from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork.
- Serve the rice on plates, topped with sliced avocado, chopped cilantro, and a squeeze of fresh lime juice.
