  • Cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Avocado - 1 medium, sliced
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced

Steps

  1. Rinse the long-grain rice under cold water until the water runs clear, then drain.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and diced onion, sautéing until the onion becomes translucent.
  3. Add the diced bell pepper and tomato to the saucepan, cooking for an additional 3-4 minutes until softened.
  4. Stir in the rinsed rice, cumin, salt, and black pepper, allowing the rice to toast for 1-2 minutes.
  5. Pour in the water and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and water is absorbed.
  6. Remove the saucepan from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork.
  7. Serve the rice on plates, topped with sliced avocado, chopped cilantro, and a squeeze of fresh lime juice.
