Ingredients

  • Long-grain white rice - 1 cup
  • Fresh cilantro - 1 cup, packed
  • Vegetable broth - 2 cups
  • Lime juice - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon

Steps

  1. Rinse the long-grain white rice under cold water until the water runs clear, then drain it.
  2. In a blender, combine the fresh cilantro, vegetable broth, lime juice, minced garlic, salt, and pepper. Blend until smooth.
  3. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  4. Add the rinsed rice to the saucepan and toast for 2-3 minutes, stirring occasionally to prevent sticking.
  5. Pour the cilantro mixture into the saucepan with the rice, bring to a gentle boil, then reduce heat to low and cover.
  6. Simmer for 18-20 minutes, or until the rice is cooked and has absorbed the liquid. Remove from heat and let it sit, covered, for an additional 5 minutes.
  7. Fluff the rice with a fork before serving and garnish with extra cilantro if desired.
