- Chipotle peppers in adobo sauce - 2 peppers
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Olive oil - 1 tablespoon
- Tomato - 1 medium, diced
- Cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the rice under cold water until the water runs clear, then drain.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
- Chop the chipotle peppers and add them to the pot along with the adobo sauce. Stir for about 1 minute to release the flavors.
- Add the diced tomato and cook for another 2-3 minutes until softened.
- Pour in the vegetable broth and bring to a boil. Add the rinsed rice, salt, and black pepper, then stir well.
- Reduce the heat to low, cover the pot, and let it simmer for about 18-20 minutes, or until the rice is cooked and the liquid is absorbed.
- Remove from heat and let it sit, covered, for an additional 5 minutes.
- Fluff the rice with a fork, then stir in the lime juice and chopped cilantro before serving.
