Ingredients

  • Long-grain rice - 1 cup
  • Vegetable broth - 2 cups
  • Chipotle peppers in adobo sauce - 2 peppers
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Olive oil - 1 tablespoon
  • Tomato - 1 medium, diced
  • Cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the rice under cold water until the water runs clear, then drain.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
  3. Chop the chipotle peppers and add them to the pot along with the adobo sauce. Stir for about 1 minute to release the flavors.
  4. Add the diced tomato and cook for another 2-3 minutes until softened.
  5. Pour in the vegetable broth and bring to a boil. Add the rinsed rice, salt, and black pepper, then stir well.
  6. Reduce the heat to low, cover the pot, and let it simmer for about 18-20 minutes, or until the rice is cooked and the liquid is absorbed.
  7. Remove from heat and let it sit, covered, for an additional 5 minutes.
  8. Fluff the rice with a fork, then stir in the lime juice and chopped cilantro before serving.
