- Vegetable broth - 400 ml

- Garlic - 2 cloves, minced
- Bell pepper (any color) - 1 medium, diced
- Zucchini - 1 medium, diced
- Tomato - 1 medium, diced
- Corn kernels - 100 grams (fresh or frozen)
- Green peas - 50 grams (fresh or frozen)
- Cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the basmati rice under cold water until the water runs clear, then drain and set aside.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and diced bell pepper to the saucepan, cooking for another 2-3 minutes until the vegetables are softened.
- Stir in the diced zucchini, tomato, corn, and green peas. Cook for an additional 5 minutes, stirring occasionally.
- Add the rinsed rice to the vegetable mixture and stir to combine. Toast the rice for about 2 minutes, allowing it to absorb the flavors.
- Pour in the vegetable broth, add cumin, paprika, salt, and black pepper. Stir well and bring to a boil.
- Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15-18 minutes, or until the rice is cooked and the liquid is absorbed.
- Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork and stir in the chopped cilantro and lime juice before serving.
